The original sixty acres of vines were planted by David Hohnen, who later went on to found Cape Mentelle. John Goelet selected Taltarni Vineyards after a worldwide search of the finest winegrowing regions. The chosen site, with its red clay, quartz and sandy loam soils and cool continental climate is idyllic for the production of premium quality sparkling wines. The aim within the vineyard is to increase fruit concentration and flavour intensity whilst retaining superb length and balance of natural acidity. Tempus Two have broken the tradition with their tantalizing editions of dessert wine, sealing the precious liquid within hand blown bottles of Italian glass, which have claimed conspicuous design awards. Botrytis Cinerea Noble Rot is a fungal infection which causes dehydration and concentration of juices within the infected grape. There was much debate at Tempus Two about which style to produce from the intensely sweet Griffith Semillon. Natural sugar levels were heightened and grapes harvested late to enhance the intense flavours. Alcohol 10.0%

Colour is a deep golden yellow. Aromas of preserved apricots and candied citrus marmalade with hints of wild honey. Powerfully rich and opulent displaying the quintessence of botrytis semillon. The flavours of dried apricots, citrus fruit marmalade and underlined by a subtle touch of wild honey. Tempus Two displays restrained acidity ending with a refreshing citrus lift, balanced by the concentration of flavours that give overall elegance and finesse.

Vinsanto is also known as Vino Santo or sacred wine, so named for it's use by clergy and congregation during the holy mass. It has been vinified in Tuscany since at least medieval times and Antinori have been making it for centuries. A pious cepage of Trebbiano and Malvasia sourced exclusively off vines grown to three Antinori estates in Chianti Classico.

Those picked during the earlier parts of vintage show higher acidity, while those picked later attain higher levels of ripeness, achieving a balance between natural fruit sugar content and acidity. Grapes are spread by hand on special straw mats in the appassitoio, a large, airy loft at theTignanello wineworks, where they are left to dry until the end of December. Fruit is pressed and the must transferred to traditional small, 50-200 litres oak casks known as caratelli, for a long, slow vinification which is arrested when the wine reaches 16. Vinsanto is aged in the caratelli three years before a very light filtration.

Heinously high in alcohol and not for the feint of heart, a single unique parcel is called upon, only ever in the finest vintage years, hand picked off a precious, sharefarmed block at Moppa. Treated to a meticulous old world vinification techniques, Highland Fling is arrested mid way through fermentation with a fortification of Torbreck brandy, lifting the intensity of palate and infusing evocative perfumes.

$10299each $1235DOZEN EACH DOZEN Only ever made in exceptional vintage years, Shiraz grapes are all hand picked off a single block of vine at Moppa. Grapes are all destemmed into small fermenters for several days of cold soak and inoculation to wild, indigenous and ambient yeasts. After a course of vinification, pumpover and plunges, ferments are brought to a halt by the addition of a well aged, oak barrel brandy, which preserves palate sweetness and retains a higher measure of alcohol. Batches are gently basket pressed directly into seasoned French oak barriques for a term of eighteen months maturation, to be bottled without fining or filtration.

Inky black, intense hue. Fruit driven, lifted aromatics of dark blackberries and cassis are blissfully complemented by the wonderful scents of oak aged brandy spirit.
